Rokeby Farms Vanilla Quark Yoghurt Pancakes

As you guys know we just LOVE healthy pancakes. They are not only delicious but also super healthy and just like all of our other recipes these are SUPER easy and quick to make.

We have teamed up with the team at Rokeby Farms to create these Vanilla and Quark Yoghurt Pancakes using their yoghurt in the mix. This particular stack is packed with healthy fats and protein (from the quark yoghurt.) Quark yoghurt is a Swedish style yoghurt which is produced by culturing the milk at a lower temperature and for a longer period of time to create a yoghurt that is naturally rich in protein and mild in flavor. The unique cold filtration process increases the natural protein by three times giving the yoghurt a thick and creamy texture at only 1% fat.

Serves 3-4


1 x tub of Rokeby Farms Natural Quark Yogurt

1 cup of almond meal

1/4 cup of coconut flour

1/2 cup of almond milk (unsweetened)

1 tsp of vanilla essence

4 eggs

1 tsp of baking powder

Your favorite sweetener: 2 tbsp of Natvia/Rice Malt Syrup/ Maple Syrup/ Honey OR 5 drops of liquid stevia

Coconut oil for cooking


  1. Add all of the ingredients to a medium sized mixing bowl and mix well until combined.
  2. Heat up a non stick pan with 1 tsp of coconut oil on medium heat.
  3. Add 2-3 tbsp of mixture per pancake (depending on desired size).
  4. Leave pancakes for 50-60 seconds on each side before flipping.

Serve with an extra dollop of Rokeby Farms Natural Yogurt and your favourite fresh fruit.
